Prep Time:    less than 30 mins
 Cooking Time:    15-20 mins
 Ingredients:      Serves:    2-3

  • 50g butter
  • finely grated rind & juice of 1 lemon
  • freshly ground sea salt & black pepper
  • 2 salmon fillets - skinned
  • 150g tagliatelle
  • 2 tbsp chopped parsley
  • 2 large florets of broccoli

 Method

1. Pre-heat oven to 200 degrees. Melt butter in a small roasting tin and add the lemon rind and juice. Season with plenty of salt & pepper.

2. Lay the salmon fillets in the roasting tin and turn them around in the lemony butter, ending up skinned side down. Place in the oven for 12-15 mins.

3. Meanwhile throw the pasta in a large pan of boiling water and cook according to the packet instructions.

4. Add the broccoli florets to the cooking pasta five minutes from the end.
